What is Kentucky Bourbon Chicken?

Although this may be a surprise to some, Bourbon chicken is named after Bourbon Street in New Orleans. However, we’ve decided to call it Kentucky Bourbon Chicken due to the use of our very own favorite, native spirit … Kentucky Bourbon! Additionally, Bourbon chicken is also considered a popular dish in Chinese takeout restaurants, but here we are, putting a Kentucky spin on this simple family friendly dish. Warning – this recipe is highly addictive.

Using a slow cooker generates a lot of sauce, making it the perfect option to serve over rice.

I like to use boneless, skinless chicken breasts. You can also use thighs or tenders.

Ingredients:

*Serving Size: 6

  • 3 lbs chicken (boneless, skinless breasts preferred)
  • 1/4 cup of ketchup
  • 1/4 cup of soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon of ginger
  • 3 tablespoons of cornstarch
  • 4 scallions, thinly sliced
  • 1/4 brown sugar
  • 2 tablespoons of Kentucky honey (check out local brand Double Barrel Honey)
  • 1/4 cup of bourbon – (we used good ole’ Kentucky Maker’s Mark)
  • 4 scallions, thinly sliced

Instructions:

  • Place chicken in the crockpot.
  • In a medium bowl, whisk ketchup, brown sugar, honey, bourbon, soy sauce, garlic, and ginger. Pour sauce over chicken.
  • Cover and cook on HIGH 3-1/2 to 4 hours or on LOW 6 to 7-1/2 hours, or until chicken breaks apart easily.
  • Remove chicken to a cutting board and pull apart.
  • In small bowl, whisk together the cornstarch and water slowly until sauce is thick.
  • Add chicken to sauce mixture, top with scallions and serve with or without rice.
