What is Bourbon?

Bourbon is a type of whiskey that is made primarily with corn. To be considered bourbon, the mash bill—the combination of grains used to make the whiskey—must contain at least 51% corn. The rest of the mash bill can be composed of other grains such as wheat, rye, or barley. It also needs to be distilled at no more than 160 proof (80% ABV) and stored at no higher than 125 proof (62.5% ABV).

Once the mash bill has been created and distilled, the liquid must be aged in new charred oak barrels for at least two years before it can legally be called “bourbon”. This aging process gives bourbon its distinct color and flavor profile; it also helps give this spirit its smooth texture that is so beloved by connoisseurs.Finally, only water may be added after distillation; no additional flavors or colors are allowed. This gives the spirit a distinction that is more pure in form compared to some other types of loosely defined whiskies.

While there’s lots of debate within its history, some suggest the name “bourbon” comes from Bourbon County, Kentucky, where the spirit was first produced by Scottish immigrants in the late 1700s. Despite its origins in Kentucky, however, the spirit can legally be made anywhere in the United States. That doesn’t change the fact that 95% of America’s Native Spirit is produced within the Bluegrass State.

Types of Bourbon

It’s important to note that there are several different types of bourbons. For example, straight bourbon, blended bourbons, single barrel, small batch, cask strength or barrel proof, and finished bourbons.

Kentucky Straight Bourbon

Kentucky Straight Bourbon must be aged for at least two years and contains no additives other than water

Blended Bourbons

Blended bourbons are composed of straight bourbons mixed with other whiskies

Single Barrel

Single Barrel bourbons are made from whiskies taken from a single barrel rather than being blended together from multiple barrels

Small Batch

There is also small batch bourbon which consists of whiskies that were all taken from limited quantities of barrels.

Cask Strength or Barrel Proof

Cask Strength bourbons or Barrel Proof are expressions which have not been diluted after distillation and therefore retain their full alcohol content. Those are typically seen around 120 proof, but can venture up into the upper 130-proof range.

Finished

One of the more trendy expressions that blur the lines is finished bourbons. Purest would actually refer to this expression as finished bourbon, which by default actually becomes a finished whiskey instead. The law has not yet been updated to address this nuisance in production however.

The Distinctive Taste of Bourbon

Bourbon has a distinct flavor profile when compared to other types of whiskeys due to its particular blend of grains and aging process. It often has notes of wood, vanilla, caramel, and spice that are derived from the oak barrels in which it is aged. The sweetness of the corn in the mash bill also contributes to its signature taste; some bourbons can even have hints of citrus or honey depending on their unique blend.
