Thomas S. Moore Bourbon “Extended Cask Finish” debuts next month.
Sazerac’s Barton 1792 Distillery is developing an entirely new product line, Thomas S. Moore Bourbon Extended Cask Finish. This brand new line of whiskey will be an annual release which includes the distillery’s high rye mash bill. After distilling and the initial aging process, it will then be finished in various other wine and spirit casks.
For its debut 2020 whiskey release, It will feature three finishes including Cabernet Sauvignon, Port, and Chardonnay. Rumor has it, the extended cask finish on these products will range from 2 to 5 years. This differentiates the new product line from other bourbon cask finishes on the market today. Some cask finished bourbons gaining traction today may only age for 4-6 months in their second cask.Â
The Master Distiller of Barton 1792 Distillery, Danny Kahn, suggests that these will be relatively younger bourbon. Thereafter, they will continue to mature and pickup some of the profile from the extended cask finishing. Although they will not be age-stated products, they will be around the range of 5-year old bourbons.
